Strawberry Butter

Creamy, rich, and delightfully sweet strawberry butter is the prettiest thing on my breakfast table. This awesome foodie hack for ramping up all sorts of baked goods is insanely easy to make!

Ingredients

  • 8 ounces (230g) unsalted butter, room temperature
  • 1 cup fresh strawberries, hulled and diced
  • ¼-½ cup powdered sugar or honey (see notes)

Instructions

  • Add the strawberries to a small food processor and puree to the desired texture, or use a fork and mash them by hand. (Really ripe strawberries are easier to mash.)
  • Place the butter, sugar, and ½ of the pureed strawberries in a medium bowl. Mix all the ingredients with a hand-held mixer until thoroughly blended.
  • Adjust the strawberry butter to the desired texture with more powdered sugar or pureed strawberries. If using honey, adjust the quantity to taste as it is sweeter than powdered sugar.
  • Transfer the strawberry butter to a serving dish or mold.
  • Refrigerate for at least an hour so the flavors meld and the butter firms up.
  • Let it soften at room temperature for a few minutes before serving.
