Ingredients

  • 7 cups (1.5-2l) hot water
  • 4 ounces (113g) ginger, diced
  • 2 cups (475ml) water
  • 1 cup (200g) granulated sugar
  • 1-2 cups (236-470ml) pineapple juice (homemade is better but store-bought works fine)
  • 1 lime, juiced

Instructions

  • In a large bowl, steep diced ginger in the hot water for an hour or more. Strain the ginger tea with cheesecloth or a fine sieve and set aside.
  • In a medium saucepan, boil 2 cups of water and sugar until the sugar dissolves. Allow to cool.
  • Combine ginger tea, pineapple juice, simple syrup, and juice from one lime. Stir and serve over ice.

Notes

  • I used fresh pineapple in this recipe, but store-bought pineapple juice works just fine when pressed for time.
  • If you live in an area where pineapples are sweeter, reduce the sugar or completely eliminate it.
  • Adding a little rum tastes amazing.
