Pineapple Ginger Juice
This refreshing pineapple juice with ginger has just the right blend of sweet, spicy, and sour tastes. It hits the spot every time!

7 cups (1.5-2l) hot water 4 ounces (113g) ginger, diced 2 cups (475ml) water 1 cup (200g) granulated sugar 1-2 cups (236-470ml) pineapple juice (homemade is better but store-bought works fine) 1 lime, juiced
In a large bowl, steep diced ginger in the hot water for an hour or more. Strain the ginger tea with cheesecloth or a fine sieve and set aside.
In a medium saucepan, boil 2 cups of water and sugar until the sugar dissolves. Allow to cool.
Combine ginger tea, pineapple juice, simple syrup, and juice from one lime. Stir and serve over ice.
I used fresh pineapple in this recipe, but store-bought pineapple juice works just fine when pressed for time.
If you live in an area where pineapples are sweeter, reduce the sugar or completely eliminate it.
Adding a little rum tastes amazing.
