Ingredients

  • cup (80g) kosher salt
  • 1 tablespoon (8-9g) black pepper
  • 1 tablespoon (12g) granulated sugar (optional)
  • 1 tablespoon (8g) paprika
  • 2 teaspoons (7g) onion powder
  • 2 teaspoons (10g) garlic powder
  • 1 teaspoon (3g) chili powder
  • ¼ teaspoon (0.5g) cayenne pepper
  • 1 teaspoon (2-3g) cornstarch, (optional)
  • 1 teaspoon (3g) cumin (optional)
  • ½ teaspoon (1-2g) mustard powder (optional)
  • ½ teaspoon (1-2g) ground turmeric (optional)

Instructions

  • Place all the ingredients - salt, pepper, sugar, paprika, onion powder, garlic powder, chili powder, cayenne, cornstarch, and optional ingredients in a coffee grinder.
  • Pulse several times until finely ground and thoroughly combined.
  • Store in an airtight container.

Notes

  • Seasonings may clump up in humid weather. You can prevent this by adding cornstarch, dried beans, or rice.
  • It is best to store this homemade seasoning in an airtight container or glass jar.
  • Store in a cool, dry, and dark area.
