Pina Colada

A classic summer drink that will take you to the tropics with every sip. Fresh pineapples, cream of coconut, and rum deliver a wonderfully refreshing summer cocktail. Perfect for celebrating life or a romantic date night.

Ingredients

  • 2 cups (250g) diced pineapple
  • 1 cup ice cubes
  • 5 ounces (140g) sweetened cream of coconut (⅓ of a 15-ounce can)
  • cup (80g) coconut milk
  • 4 ounces (120ml) white rum
  • 2 ounces (60ml) dark rum (optional)
  • 2 tablespoons (30ml) fresh lime juice
  • optional garnishes: maraschino cherries, pineapple chunks, and lime slices

Instructions

  • Puree the pineapple, ice cubes, cream of coconut, coconut milk, white and dark rum, and lime juice in a blender on high until smooth. We’re aiming for a slushy frozen drink consistency.
  • Pour the mixture into two tall glasses and garnish with maraschino cherries, pineapple, and lime slices. Serve immediately.

Notes

  • Feel free to replace fresh pineapple with canned or frozen pineapple juice.
  • Use crushed ice if you don't have a blender to make a frozen pina colada.
  • Avoid adding too much ice, as it will melt and make the drink watery.

Here’s my bonus piña colada fluff salad recipe.
1 3.4-ounce package instant coconut cream pudding
1 20-ounce can crushed pineapple in its juice
4 ounces cream cheese, softened
½ recipe homemade whipped cream
½ cup shredded coconut, toasted
2-3 cups miniature marshmallows
Mix the instant pudding with crushed pineapple, the juice, and the softened cream cheese, and stir well.
Gently fold in the whipped cream, toasted coconut, and marshmallows. Chill and enjoy.
