Strawberry Daiquiri

This amazing fruity cocktail with frozen strawberries, lime juice, ice, and white rum is a must-have for your list of classic daiquiris. Perfect for poolside, backyard gatherings, and even on holidays. A refreshingly good, impressive, vibrant drink!

Ingredients

  • 2 cups (250g) frozen strawberries (about a pint)
  • 2 tablespoons (30ml) lime juice, freshly squeezed
  • 2 cups ice cubes
  • ¼ cup (50g) sugar
  • ¼ cup (60ml) white rum
  • 4 small scoops vanilla ice cream (optional)

Instructions

  • Puree frozen strawberries, lime juice, ice cubes, sugar, and rum in a blender until smooth and slushy.
  • Divide the mixture between two serving glasses. If layering with ice cream, fill both glasses about ⅓ full. Add a scoop of ice cream, and pour in another layer of strawberry daiquiri. Add another scoop of ice cream and the rest of the daiquiri mix.
  • Garnish with a strawberry and lime wedge, and enjoy.

Notes

  • Fresh strawberries also work great as the ice will give daiquiris the traditional slushy texture.
  • Superfine sugar will dissolve better in the blender. Or you can use ¼ cup of simple syrup instead of the sugar.
  • To adjust the thickness of your frozen daiquiri, you may add as much or as little ice into the blender. For a slushy consistency, you may start by adding 1 cup of ice, then add another ½ cup at a time and pulse to your desired consistency.
  • You may also adjust the amount of lemon and lime juice for this recipe depending on your preference.
  • Customize this drink with more fruit, more or less ice, and more or less sugar. Adding basil or mint provides a delicious flavor twist.
