White Pizza Sauce

Ingredients

  • 3 tablespoons (42g) salted butter 
  • 2 tablespoons (20g) flour
  • 1 teaspoon (5g) minced garlic
  • ½ teaspoon (1g) Italian seasoning  
  • ¾ cup (180ml) whole milk 
  • ½ cup (120g) heavy cream  
  • salt and pepper to taste
  • cup (35g) finely grated Parmesan cheese
  • 2 tablespoons (3g) fresh basil, finely chopped

Instructions

  • Melt butter in a small saucepan over medium heat.  
  • Whisk in the flour and continue whisking for a minute or two to get rid of the raw taste. Stir in the minced garlic and Italian seasonings for about 30 seconds.
  • Slowly add the whole milk and heavy cream, whisking constantly until the mixture has thickened and becomes smooth.
  • Season with salt and pepper to taste.
  • Remove from the heat, add cheese, and stir until it is fully incorporated and smooth.
  • Stir in basil if desired.
  • Use immediately or cool, seal, and refrigerate for up to 5 days.

Notes

  • Freezing this sauce isn't recommended since the milk and cream may separate. If you do freeze it and it separates, blitz it for a few seconds in the blender to emulsify it.
  • Slather homemade pizza dough with this sauce.
