Recipe Notes

  • Turn it into a taco by switching out the bun for corn taco shells. Your gluten-free friends will be so happy.
  • Load a baked potato with a generous scoop on top. Add more cheese if desired, and you have another gluten-free dinner delight.
  • Replace the ground steak with ground chicken or turkey for a more heart-healthy version.

Make-Ahead and Storage Instructions

If you make the sloppy joe mixture a day or two in advance, it will even taste better. Let the mix cool and store it in an airtight container in the fridge for a day or two.

Add the cheese when you reheat the sloppy joe filling on the stove. Pile it on toasted buns and enjoy.

Leftovers should last in the fridge in an airtight container for 3-5 days. Keep the buns and filling separately so the buns don’t get soggy.

Ingredients

  • 1 pound (450g) lean ground beef
  • 1-2 tablespoons (14-30g) butter
  • 1 small yellow onion, diced
  • 1 teaspoon (3g) minced garlic
  • 1 small green bell pepper, diced
  • 2 green onions, thinly sliced
  • 2 tablespoons (30g) ketchup
  • 1 tablespoon (15ml) Worcestershire sauce
  • 1 teaspoon (2g) white pepper
  • 1 teaspoon (2g) paprika
  • 2 teaspoons (8g) Creole seasoning
  • 1 tablespoon (8g) cornstarch
  • 1 cup (240ml) beef broth
  • 8 ounces (227g) Provolone cheese, sliced
  • 5-6 brioche hamburger buns or about 8 bread rolls

Instructions

  • Heat a large or cast iron skillet over medium-high. Add the ground beef and cook for 3-5 minutes or until browned. Break it up to prevent it from clumping.
  • Remove the beef from the pan and remove excess fat, especially if using regular ground beef. Use your best judgment.
  • Add the butter, onions, garlic, bell peppers, and green onions—saute for 1-2 minutes.
  • Return ground beef to the pan, and follow with the ketchup, Worcestershire sauce, white pepper, paprika, and Creole seasoning. Cook for about 2 minutes.
  • In a small cup, mix the beef stock and cornstarch and add to the beef mixture.
  • Cook for 4-5 minutes or until the liquid reduces some. Add salt and pepper to taste.
  • Turn off the heat, add the provolone cheese, and serve on toasted rolls or brioche buns.

Tips & Notes:

  • Use a large skillet to brown the beef. It browns better when it’s not crowded.
  • Break up clumps in the beef as you brown it. That helps keep the overall texture even and makes the sandwiches a tad less sloppy.
  • Worcestershire sauce is the main flavor component of this recipe. But if you must substitute it, try tamari or soy sauce.
