Ingredients

  • 2 pounds (900g) chicken wings (cut into sections or whole)
  • salt and pepper to taste (see notes)
  • ½ tablespoon (1-2g) thyme
  • 2 teaspoons (8-9g) onion powder
  • 2 teaspoons (10g) garlic powder
  • 1 teaspoon (3g) smoked paprika or regular paprika
  • 1 teaspoon (3g) white pepper
  • ¼-½ teaspoon (0.50-1g) cayenne pepper (adjust to taste)
  • 1 teaspoon (3-4g) bouillon powder, chicken or beef is fine (optional)
  • cooking spray for the basket

Instructions

  • Thoroughly pat the chicken wings dry with paper towels and place them on a large plate or in a mixing bowl.
  • Preheat the air fryer; I preheat mine at 400℉ (205℃) for 5 minutes.
  • When ready to air fry, season the wings with salt and pepper, then thoroughly mix with the spices. Or add your favorite spice mix, like jerk, Creole, or Italian seasoning.
  • Set your air fryer to 380℉ (195℃). Spray the basket with a nonstick cooking spray and place chicken wings in it. To avoid overcrowding the basket, fry in batches if necessary.
  • Cook for about 10 minutes, remove the air fryer basket, and shake it. Cook for 10 more minutes. Then increase the heat to 400°F (205℃) and cook 5-6  minutes more for extra crispy chicken wings. Chicken wings should be brown and thoroughly cooked through before serving.
  • Remove and toss with hot sauce or serve with ranch or blue cheese dressing.

Notes

  • The ratio of salt to chicken wings runs about ½-1 teaspoon (3-5g) of salt per pound of chicken.
  • Make sure to dry the wings well for crispier skin.
  • You could also mix a pinch of baking soda in with the spices for crispier skin.
  • Please keep in mind that nutritional information is a rough estimate and can vary greatly based on the products used.
