Are you looking forward to Friday as much as I am? Actually, Sunday is when I finally have time to relax and enjoy a good cocktail while grilling up something tasty. Even though strawberries are best in spring, freezing them makes them a year-round delight. And while I was excited to get fresh fruit for this lovely margarita, the frozen ones work just as well.

We were grilling and chatting a couple of weeks ago, and my sister decided she wanted a frozen cocktail. I was more than happy to oblige and whipped up this fast and easy drink. The kids wanted to join the party, so I made a batch of virgin strawberry margaritas with sparkling water and a spoonful of agave syrup instead of the tequila and triple sec. Everyone was happy!

Daiquiris vs. Margaritas

I love both, so neither one is going to hear me complain. Daiquiris and margaritas are closely related. The main difference is that daiquiris use rum, while margaritas enjoy tequila. But they both taste as good as they look!

Which Tequila Is Best for Margaritas?

When it comes to margaritas, I go with a good-quality, 100% agave, blanco (silver) tequila, because mixtos and cheaper versions can be harsh, overly sweet, or sour. If I have a little extra cash, Casa Noble Crystal is definitely worth the price. Milagro is a more economical choice, and a close second.

How to Make a Strawberry Margarita

Make the simple syrup and color the sugar to rim the glasses for a little extra.
  1. Simple Syrup: In a medium saucepan, combine a cup of sugar with a cup of water, and bring it to a boil. Stir until the sugar dissolves (5-7 minutes), then let it cool. (Photos 1-2)
  2. Optional Colored Sugar: Pulse sugar in a food processor with the desired amount of red food coloring until blended. (Photos 3-4)
Set up the liquid and sugar and rim the glasses.
  1. Pour lime or lemon juice onto a plate or shallow bowl. Or rub the rim of the glass with a sliced lime. In another plate or shallow bowl, add the colored sugar or salt. Set aside.
  2. Garnish the rim: Remove and place on a plate. Shake off any drops of water from the glass, and dip the glass upside down into desired garnish. Twist the glass around in the salt or sugar to ensure the entire rim is covered with a thick coating. Tap lightly to remove the excess. Set aside and proceed with the margaritas. (Photos 5-7)
Set the rimmed glasses aside, puree the margarita ingredients, and pour the finished drink into the waiting glasses.

Make the margarita: Blend the chopped strawberry, lime juice, tequila, triple sec, simple syrup, and ice in a blender until smooth. Pour into the rimmed glasses, garnish with sliced lime and or strawberry, and serve immediately. (Photos 8-10)

Recipe Notes

  • Add more strawberries for a fruitier drink.
  • For a non-alcoholic version, swap the tequila with soda or sparkling water and a spoonful of agave syrup. A little orange extract or adding the zest of an orange to the blender can replace the triple sec.
  • Reduce the amount of ice if using frozen strawberries.

Make-Ahead Instructions

The alcohol and sugar content keep the margaritas from freezing solid. They’ll stay slushy in the freezer for an easy make-ahead. Or leave the ice out and refrigerate the mix in a pitcher until ready to serve over the rocks.

Ingredients

Simple Syrup

  • 1 cup (200g) sugar
  • 1 cup (236ml) water

The Margaritas

  • 1 pound (450g) ripe strawberries, hulled (frozen strawberries—see notes)
  • cup (85ml) fresh lime juice 
  • 1 cup cup (236ml) tequila 
  • ⅓-½ cup (109-164ml) triple sec 
  • cup (109g) simple syrup (see notes for substitution)
  • 3-4 cups (650-868g) ice  
  • 1 lime, cut into slices or wedges for serving 
  • ¼ cup coarse salt or white sugar and red food coloring for glass rims

Instructions

Homemade Simple Syrup

  • Bring 1 cup of sugar and 1 cup of water to a boil, and keep stirring until the sugar dissolves (5-7 minutes). Then let it cool.

The Margaritas

  • Pour lime juice, lemon juice, or water into a plate or shallow bowl. Or rub the rim of the glass with a sliced lime.  
  • In another plate or shallow bowl, add sugar or salt, and set aside. If making colored sugar, pulse sugar in a food processor with the desired amount of food coloring until blended. Pour it onto a plate.
  • Dip the margarita glass into the liquid, and gently shake off excess. Then dip the glass upside down into the salt or sugar, and twist it around to ensure the rim is completely covered. Gently tap off excess sugar and set aside. 
  • Blend the chopped strawberry, lime juice, tequila, triple sec, simple syrup, and ice in a blender until smooth. 
  • Divide the cocktail between the rimmed glasses, garnish with sliced lime and a strawberry, and serve immediately.

Tips & Notes:

  • No need to thaw frozen strawberries. They make your margarita thicker and keep it cold a bit longer.
  • Add more ice for a thicker drink or less ice for a thinner one. If it turns out that the drink is too thick for your liking, thin it out by adding liquid a little at a time.
  • Triple sec is a colorless, orange-flavored liqueur made from dried peels of bitter and sweet oranges. If you don’t have it handy, orange brandy is a good option. A little orange extract works for a virgin margarita.
  • Feel free to swap the simple syrup with honey or agave syrup.
