One of the best ways I release my stresses is through baking. You might think that the easy baking steps would calm me down, yes but that’s just half of the reason. What I like most about baking is that I could release all my feelings when I punch the dough.
Isn’t it so convenient? Releasing all your rage and pressure from the past week and making something so delectably pleasing, it’s so therapeutic! Now all you have to worry about is which dish to pair it with. Who knew intense emotions can taste so sweet?
Honey Wheat Rolls
Although this dish sounds healthy, it’s actually made from simple wheat flour. Yes, friends, there is a difference between whole wheat and wheat flour! This is important because the type of flour tells you what you put in your body.
Wheat Flour vs Whole Wheat
If you’re into healthy diet plans, you’ve probably heard of whole wheat bread which has a healthy image. This is basically from the whole kernel itself. This means that the bran and the germ of each kernel are included in making the whole bread. The great part about this ingredient is that it packs more nutrients and fiber than other flours.
What you see in regular grocery stores, that white powdery stuff, that’s wheat flour. It’s the product of grinding the wheat kernels after the bran and germ have been extracted. Visibly it’s more refined which means that it has little to no fiber and a higher amount of sugar.
For our recipe today, we’ll use honey wheat which is often made with wheat flour. Although putting “honey” on a product might make it look healthy, it doesn’t give much additional nutritional value.

- Milk
- Honey
- Unsalted Butter

- All-purpose flour

As you can see, we’ll use two types of butter for brushing the dough and the bread itself. You can find both salted and unsalted variants in Kroger’s wide selection of ingredients.
Ingredient Alternatives and Substitutions
Yeast
Yeast is an important ingredient for this recipe which gives your bread the air it needs to rise. However, you’ll still need to knead the dough and proof it before baking. You can replace this with baking soda as it also provides similar effects. The carbon dioxide from the soda reacts with the other ingredients producing air bubbles in the dough. No kneading is needed.
Eggs
Applesauce is one of the best-known replacements for eggs. Mainly because it replicates the binding effect of the latter. It’s also a great alternative if you’re allergic to eggs. The ratio for this mixture is ¼ cup of applesauce for every one medium egg.
Butter
This dairy product is a great leavening agent that also gives our baked treat the moisture it deserves. Fats and fat solids are an important part of this ingredient. You can simply replace this with coconut oil to add a little extra flavor.
The only difference between this product and the original is the water content which affects the consistency of the finished good. Oil basically doesn’t contain any water while butter has milk solids, fat, and water. The ratio for this substitute is 1:1.
Tips and Suggestions
Yeast
It is a general rule in baking that the yeast sits as far away as possible from the salt. This is because the salt deactivates or, in essence, kills the yeast. What happens when you have dead yeast? Well, it doesn’t do its job at all, giving you flatter and denser bread. That’s not good!
Honey
You’ve probably been warned about using metal utensils for honey as it can ruin the whole thing. Is it true? In a way it is! A quick little contact of metal wouldn’t really affect the ingredient. However, letting metal set in for more than a day would definitely ruin it.
Shaping
Normally, I roll my dough into small circles in my pan. However, this technique leaves me with uneven sizes. This becomes a problem when baking because uneven sizes can lead to uneven baking.
An easy solution to this problem is rolling it out in the shape of your baking sheet or pan. Once it’s one whole big rectangle, cut it into smaller rectangles using a knife. This will give you a better measurement when you bake your rolls. Let the dough pieces rise and fill in any gaps in the pan before you bake the whole thing.
100% Whole Wheat Flour
Whole wheat flour already has a high protein content as it is. This is why whenever you use this ingredient, using around 50% of another type of flour is a general rule. Without it, you might end up with dense and dry bread which you certainly don’t want.
So, can you substitute all-purpose flour with wheat flour too? Yes, you can! However, this mixture requires more liquid to make it a bit more hydrated. Be careful not to add too much because you might turn it into a soggy mess.
Making Ahead and Storage Instructions
After letting the dough rise, punch down the dough and cover the bowl tightly with cling wrap. You can refrigerate this for around 2 days before using it.
You can also freeze this for about two months. When you’re finally ready to use your dough, let it thaw to room temperature before kneading and baking.
You can also freeze baked rolls for about 3 months, just remember to let it thaw before reheating. Place them in a microwave-safe container and reheat at 300 F for 5 to 10 minutes.

How to Make Honey Wheat Rolls
Honey Butter
Combine butter and honey until fully combined. Refrigerate or set aside until ready to be used.
Making the Dough
Combine 2 tablespoons lukewarm water and yeast in a large bowl or stand mixer and let it sit until it dissolves for about 5 minutes. Meanwhile, in a microwave-safe medium bowl, combine milk, with the butter pieces, salt. Microwave for about a minute and stir until everything is melted. Lightly whisk in the egg and the vanilla honey to the butter mixture (if the mixture is too hot let it cool to warm to prevent eggs from curdling.) Dump everything into the yeast mixture. If using a stand mixer, mix on medium-high speed using a dough hook until all the ingredients are combined, or just mix by hand.
Then add 2 cups of wheat flour and 1 ¾ cups all-purpose flour. Continue mixing the dough and stop when the dough doesn’t stick to the sides or bottom of the bowl. Add additional flour (if needed) to make a soft dough. (It is better to have sticky dough than hard dough). Turn the dough on a lightly floured surface and knead for 8 to 10 minutes or more if you want an airy bread. Or you may continue kneading with a dough hook for about 8 minutes. Place the bread dough in a large greased bowl. Cover it loosely with clean clothe and let it rise in a warm, draft-free place for about 45 minutes to 1 hour or until doubled.
Baking the Rolls
Punch the dough down. At this point, the dough maybe shaped into a grease loaf pan, and place seam side down in the pan or divide dough into 12 equal pieces. Shape them into balls. Place in a greased 12-inch round pans. Brush with the honey butter mixture and bake. Preheat the oven to 350 F. Bake for 20 to 25 minutes or until the crust is deep golden brown and the bottom of the loaf sounds hollow when tapped. Remove from the baking pan and let it cool. Serve them warm.
