Chocolate desserts and snacks may be perfect for Valentine’s Day, but you don’t have to wait. I’ve added an exciting twist to a classic West African street food. You guessed right: chocolate puff puff. The chocolate sauce takes it to higher levels.

Why Chocolate in Puff Puff

Puff-puff purists, hold your horses. Just try it before you stone me. The deep-fried dough is already impressive and the ideal carrier for sweet flavors. They’re just as versatile as bread. So why not get creative?

The secret to pure decadence ended up being butter. I tried it without butter, and though it was good, it wasn’t great. Butter made it lighter and crunchier. Plus, you can’t replace the authentic butter flavor.

How to Make Chocolate Puff Puff

Activate yeast, add liquids, and add flour
Add cocoa powder, let rise, then fry
  • Mix salt, sugar, water, and yeast. Set aside for 5 minutes to activate the yeast. (Photo 1)
  • Add the milk, melted butter, and egg to the yeast mixture. (Photo 2)
  • Batter – Mix in the flour and cocoa powder thoroughly. Let rise for 1-2 hours. (Photos 3-7)
  • Fry – Drop balls of batter into hot oil and fry until the bottom side is golden brown. Turn the ball over and fry for a few more minutes until the other side is golden brown. (Photo 8)
  • Drain – Remove the puff puff from the oil with a slotted spoon. Place them on napkins right away to soak excess oil.
  • Sauce – Melt cream, butter, and chocolate chips in the microwave or saucepan. Mix well.
  • Serve with chocolate dipping sauce. Enjoy!

Recipe Notes

  1. Test the oil’s temperature by putting a drop of batter into the oil. If it’s hot enough, the batter will rise to the top.
  2. If you don’t want to get your hands messy, use two spoons—one for the batter and the other to push it off gently into the oil.

Ingredients

Puff Puff

  • ½ tablespoon (8-9g) salt
  • ½-¾ cup (100-175g) sugar
  • 1 cup (240ml) warm water
  • 3 teaspoons (9g) active dry yeast
  • 1 cup (240m) warm milk
  • ¼ cup (58g) butter
  • 1 large egg
  • cups (420g) flour plus extra batter is too wet
  • ¼ cup (25g) cocoa powder
  • oil for deep frying

Chocolate Sauce

  • 1 cup (170g) chocolate (semi-sweet and milk chocolate both work fine)
  • ¼ cup (60g) cream
  • 1 tablespoon (14g) butter

Instructions

  • Mix salt, sugar, water, and yeast. Set aside for 5 minutes to activate the yeast.
  • Heat butter and milk in the microwave or saucepan just until the butter melts. Let cool to room temperature.
  • Add the milk, butter, and egg to the yeast mixture.
  • Follow with the flour and cocoa powder, and mix thoroughly with a spoon or your hands. Let the mixture rise for 1-2 hours.
  • Fill a large saucepan or Dutch oven with vegetable oil until it is at least 3 inches (or 5cm) deep, and heat on low. Too little oil will result in flatter balls.
  • Test the oil's temperature by putting a drop of batter into the oil. If it's hot enough, the batter will rise to the top. Grab a little batter at a time with your hands or two spoons (one for the batter and the other to push it off gently into the oil). It should form into a ball.
  • Fry for a few minutes until the bottom side is golden brown. Turn the ball over and fry for a few more minutes until the other side is golden brown.
  • Remove the puff puff from the oil with a slotted spoon (or something similar). Place them on napkins right away to soak excess oil.
  • Melt cream, butter, and chocolate chips in the microwave or saucepan. Mix well.
  • Serve chocolate dipping sauce with the puff puffs.

    I made your traditional puff puff last year and they turned out great! I made them for my Nigerian friend. He really enjoyed them. I decided to make your chocolate puff puff and waiting to fry them. However, I too noticed that you have an egg in your ingredients list but no egg in the description on how to make them so I didn’t add it assuming it was a mistake! Well, after reading through the comments I learned that it indeed is in the recipe but I didn’t include it because there was no mention of it until someone commented, which you did address but it would have beneficial to edit the recipe to included “add egg after the butter and milk mixture” because I didn’t read the comments until now, and that’s when I learned of it. I just hope that they turn out especially after using high quality cocoa powder.

    I like the pictures you provide and step by step procedures. It’s very helpful.

    Hi Imma, I’m looking forward to trying this chocolate puff puff recipe out as well as your recipes too! I am a foodie too and love the fact you are taking risk with our Nigeria cuisine by bringing it into the 21st century! I’ve done the same with many recipes and am always eager to mix or fuse different flavor profiles & cultures together in foods. For instance I have a seafood moin moin that would knock socks off any traditional plain moin moin easily but as you are well aware it was outsiders who really took to the flavors first the traditionalist had to warm to it after they saw others eating enjoying and not collapsing over first. ..lol
    Our people are too funny sometimes the way they behave when it comes to our food. Anyway, great job I’ll post when I make the recipe 🙂
