I would say this is the perfect potato salad for any summer barbecue and is great for picnics too. It is almost summer and barbecues, cookouts, parties and picnics are all the rage at this time of the year.

It is a great make ahead dish and you can use any potatoes you have on hand, it will work just fine. It is very important that you lightly salt your potatoes when boiling -It makes a lot of difference

What makes this salad uniquely Caribbean is the addition of peas, carrots, and eggs and of course, Heinz creamy salad dressing- I just love Heinz salad dressing, it is a childhood favorite.

Caribbean Potato Salad - This incredible potato salad is creamy, luscious, tasty, and chock full of vegetables.

Ingredients

  • 1 pound potatoes, cleaned and cut into bite-sized pieces
  • 2-3 boiled eggs
  • 1 cups peas and carrots, or more (fresh, frozen, or canned work)
  • ¼ cup mayonnaise
  • ¼ cup sour cream
  • ¼ cup Heinz salad dressing
  • ½ teaspoon mustard
  • ¼ teaspoon smoked paprika
  • ½ teaspoon Cajun spice
  • ¼ cup sweet relish
  • ¼ cup onions, diced
  • Salt and pepper to taste

Instructions

  • Bring a pot of salted water to a boil. Then add potatoes and cook until tender but still firm to the touch, about 5-10 minutes. Drain water.
  • Chop eggs, then add them and the peas and carrots to the potatoes.
  • In a medium bowl combine the chopped onions, mayonnaise, sour cream, Heinz dressing, relish, Cajun spice, mustard, and mayonnaise. Mix well, add to the potato and egg mixture. Adjust for salt and pepper.Refrigerate until ready to eat.

    Though in the pictures it shows the carrots and peas but not in the directions… is this tinned peas and carrots? Or frozen…

    1. Thanks for catching that. Whatever you have available works. Fresh is best whenever you can, frozen is second best, and canned comes in a close third.

  3. You can get the dressing at Whole Market or Tony’s if you leave in Chicago area. Love Belizean potato salad have friends from their… hope this help everyone.

    Referring to the comments about the Heinz Salad dressing.. I ordered the Heinz Salad Cream from Amazon..I’m assuming it’s the same as the Heinz Salad Dressing in the recipe. It just arrived. The taste is almost exactly the same as Miracle Whip Salad Dressing. You can buy it readily at most American stores.

  7. It looks really good, but in mine i use real mayonaise, and have never used carrots
    I think i will leave the carrots out i like carrots but only cooked, I’m Polish and make it about the same way!
    Except for the carrots,
    I some time put cut up raddishes in it,

    1. Recipe updated, I use the standard salad dressing – made by heinz, available in Caribbean African Markets and some super markets depending on your neighborhood.
