But hey, you can also enjoy the taste of summer while a winter chill is blowing outside. You can now get corn on the cob in the freezer section when you need a bit of sunshine during a blizzard.

Why Oven Roast Corn on the Cob

Having cooking options for corn on the cob delivers the excitement of experimenting. Boiling is the traditional method, and grilling is becoming popular. But the easiest of all is roasting it in the oven. Season it with garlic butter (and a dash of Creole seasoning), wrap it in foil, roast it in a hot oven, and enjoy.

How to Roast Corn on the Cob in the Oven

Make the butter, slather the corn, and roast.

  1. Preheat the oven to 425℉ (218 ℃). Remove the corn’s husk and silk.
  2. Spiced Butter – In a small bowl, combine garlic butter and Creole seasoning and set aside. (Photo 1)
  3. Place corn on the cobs in individual foil and brush with garlic butter. (Photo 2)
  4. Wrap the corn. Repeat with the remaining corn, then place them on a sheet pan. (Photo 3)
  5. Bake for 20-25 minutes, turning the tray halfway through roasting. Remove and let rest for a minute or two. Brush with more garlic butter mixture if desired. (Photo 4)

In the Husk Method

  1. Clean Corn – Cut off excess silk from each ear of corn with a knife or scissors. Remove any loose husks.
  2. Bake – Place each ear of corn with husk directly onto the oven grates while spacing them out evenly from each other. Bake in a preheated 350℉ (180 ℃) oven for 35 minutes.
  3. Serve – Allow to cool slightly before removing the husks, and slather them with garlic butter (or regular butter and salt).

Make-Ahead and Leftover Makeovers

Something about corn on the cob tastes best fresh from the oven. But reheating them in the microwave with a little water is a close second.

Make a double batch and cut the corn off the cob when it cools. Then, toss some on a salad, in hamburger vegetable soup, or make tasty corn fritters.

Oven-Roasted Corn on the Cob

This fantastic and simple way to enjoy the incredible tastes of summer makes roasting corn a breeze. With almost no prep and personal time, you can have moist, beautifully caramelized corn on the cob oozing with flavor.

Ingredients

  • 4-6 ears ears corn, husks and silk removed
  • 2-3 tablespoons (28-40g) garlic butter or just plain butter
  • 1-2 teaspoons (5-10g) Creole seasoning
  • salt and pepper to taste

Instructions

  • Preheat the oven to 425℉ (218 ℃).
  • In a small bowl, combine garlic butter and Creole seasoning. Set aside.
  • Place corn individually with foil, slather with garlic Creole seasoning butter, and wrap the corn with the foil. Repeat on the remaining ears of corn and place them on a baking sheet.
  • Bake for 20-25 minutes, turning the tray halfway through roasting. 
  • Remove and cool for a minute or two before serving. Brush with more garlic butter if desired.

Tips & Notes:

  • No time to husk the corn? Just remove excess silk and loose husks from each ear of corn. Then, place each one directly onto the oven grates, spacing them out evenly, and bake in a preheated 350℉ (177 ℃) oven for 35 minutes. Allow them to cool enough to peel the husks without burning yourself, peel them, and slather them with garlic butter and seasoning.

  5. I’m planning to make this and bring it as a side for Christmas dinner tomorrow. Being December, I couldn’t find fresh Corn so I’m using frozen. Step 2 says combine garlic butter and Creole while step 3 says top with garlic butter then brush with creole. I’m confused.

      Great to hear you’re making this for Christmas dinner! Using frozen corn is absolutely fine; it works just as well as fresh corn. Regarding the garlic butter and Creole seasoning, either method described in the recipe will work. You can combine the garlic butter and Creole seasoning together as in step 2, or top the corn with garlic butter and then brush with Creole seasoning separately as in step 3. Both methods will infuse the corn with delicious flavors. It’s more about your preference for how you’d like to layer the flavors.

    I do my one cob (wife does not eat it) in a Pyrex dish, 3 minutes in the microwave on high.
    Smear butter on the top, no salt. Will now try with some herbs and garlic.

  9. The instructions says 425 degrees for 20-25 minutes, but the video said 350 degrees for 35 minutes. Which one is it?

    1. If you’d choose to cook it at 425, you need to cook it for 20-25 minutes. But if you want a lower temp, it should be 35 minutes. 🙂
